The snow-covered forest is lit up with magical lights or a large hanging fixture evoking the full moon, setting the scene for dinners close to the elements and the stars, surrounded by stone and wood. Between Albertville oak, Mont-Blanc granite, fresh herbs, dried flowers, the raw ceramics of Anne Marmottan, and the soundscape created by the Couturier du Son, chef Jean-Rémi Caillon’s precise dishes awaken all the senses.
He celebrates Savoyard hospitality with bougnettes and reimagines French cuisine with a tartelette à la Gauloise. In his five- or seven-course tasting menu, he gathers sweet clover, lovage, and agastache, showcases a pepper from Courchevel (yes, really!), and introduces diners to the breeders, fishermen, foragers, and producers of Savoie he values.
