The lactation cycle, composition, heat treatments, fat content, and manufacturing are all topics covered in this workshop, which takes a fun and scientific approach to this precious liquid.
Thursdays and Fridays only.
Topics covered: definition of the cow and its lactation cycle, milk components and heat treatments, dairy products from cows and other animals around the world, tasting and observation of milk characteristics.
Organization: activities alternating between group work (maximum 5 groups) and group discussions.
