The snow-covered forest is lit up with magical lights or a large hanging fixture evoking the full moon, setting the scene for dinners close to the elements and the stars, surrounded by stone and wood. It’s a meeting with the farmers, producers, and artisans who nourish the mountains with their craftsmanship.
Between Albertville oak, Mont-Blanc granite, fresh herbs, dried flowers, the raw ceramics of Anne Marmottan, and the soundscape created by the Couturier du Son, chef Jean-Rémi Caillon’s precise dishes awaken all the senses.
He celebrates Savoyard hospitality with bougnettes and reimagines French cuisine with a tartelette à la Gauloise. In his five- or seven-course tasting menu, he gathers sweet clover, lovage, and agastache, showcases a pepper from Courchevel (yes, really!), and introduces diners to the breeders, fishermen, foragers, and producers of Savoie he values. His work with mushrooms, game, blonde peas, trout, or truffles is guided by the pursuit of umami—that mysterious flavor that unites all the others.
